
I was excited to run across this Dasylirion near the Carlsbad Caverns. Dasylirion is also known as Sotol, which is the basis for a rustic distilled spirit of that name, somewhat akin to Mezcal, from the Chihuahuan region in Mexico. I don’t know why the New Mexicans aren’t making Sotol.
As I mentioned, Sotol is made in a rustic manner. Dinah and I enjoyed a Sotol in Santa Fe for which the plant material was diced with a knife and hatchet, and then stomped on by a cow before fermenting.
